Gentoo can definitely be a server os as well, it can be anything because it is so simple and doesn't impose an idea of what it should be. I've heard of people who build custom gentoo images for specialised servers, you probably won't do that, but the option to even do something as simple as
-gui to not have anything to do with gui compiled is very good. Or doing -gtk qt because you're a cutie not a footf*g. Possibilities are endless, bounded only by how fast your computer is
